For character customization go for ToME. This game has very unique classes that play very differently from each other. ADOM is an amazing roguelike (probably my favorite), but there's not a huge difference between the classes when compared to ToME. Dungeonmans is more of a joke than a game, really. It gets repetitive very fast.
